Milk-100ml, 0.42 cups, 3.38 fl oz
Sugar-40g, 3 tbsp
Active dry yeast- 6g, 2 tsp
Flour – 2 tbsp
Eggs- 6, 325g, 11.55oz
Bread flour- 580g, 4.85 cups, 20.5 oz
Salt- ½ tsp, 3 g
Butter- 150g, 5.3 oz

Step 1 – Activate Yeast
In a bowl, mix lukewarm milk, sugar, flour, and active dry yeast. Rest 10–15 minutes until foamy.
Step 2 – Prepare Dough
Whisk eggs. In a mixing bowl, sift bread flour, add salt, then pour in the yeast mixture and eggs. Mix until combined. Cover and rest 30 minutes.
Step 3 – Knead Dough
Lightly oil your work surface and hands. Knead until smooth and elastic. Add soft butter and knead again until shiny and passes the windowpane test.
Step 4 – First Proof
Place dough in a greased bowl, cover, and let rise until doubled. (Optional: refrigerate overnight for more flavor.)
Step 5 – Shape Dough
Punch down, divide evenly, shape into balls or preferred style, and place in greased loaf pans.
Step 6 – Final Proof
Cover and proof until doubled. (45 min in summer, up to 2 hrs in winter.)
Step 7 – Egg Wash
Mix 1 egg yolk with 2 tbsp milk. Brush tops gently.
Step 8 – Bake
Bake at 170°C (fan-forced) for 30 minutes. Cool before slicing.
