ButcherBox Head Chef Yankel walks you through this deliciously simple recipe for breaded, fried chicken!

Recipe:
1. Place 1 chicken breast in a ziplock bag, and flatten to ¼ inch thickness using a flat bottom frying pan or rolling pin. Repeat process for remaining 3 breasts
2. Arrange 3 shallow dishes side by side and place flour in first, egg in second and breadcrumbs in third
3. Add salt and pepper to flour and stir to combine
4. Working 1 at a time, coat each breast lightly with flour, then submerge in egg, then cover well with bread crumbs
5. Preheat bottom pan over medium heat, and add half of the clarified butter. Butter should be 350 degrees before frying. Use a small amount of breadcrumbs to test the butter, it should foam immediately.
6. Place 2 of the breaded breasts in the pan, cook on one side for about 3 minutes or until golden brown. Flip breasts and repeat, adjusting the temperature as needed to avoid burning
7. Place cooked chicken on wire rack or paper towel to drain excess butter.
8. Add remaining oil to pan and repeat process.
