How to make soft meals for elderly in a rice cooker.

That's right...the rice cooker isn't just for rice! You can easily cook healthy, low sodium meals, that are soft enough for an elderly loved one to chew in just a rice cooker!

This easy chicken and rice with vegetable recipe is incredibly simple to make. Simply add all the ingredients to the rice cooker, hit start, and you will have a delicious, nutrient dense meal for a senior with very little effort.

What you will love this rice cooker meal recipe:
•perfect for a senior who needs self meals
•perfect for anyone on a soft food diet
•low effort meal
•can easily be altered to taste
•flavorful and nutrient dense
•easy for a caregiver to make
•does not require a stove top

What you need to make this rice cooker recipe:
(makes 2 servings)
•1/2 cup of uncooked white rice
•1-2 cups of veggies, chopped small (I used carrots and edamame)
•2 boneless chicken thighs or boneless chicken breasts (I used thighs)
•1 tsp soy sauce
•1/2 tsp fish sauce
•2 cloves of garlic chopped
•1 inch of fresh grated ginger
•low sodium chicken broth
•••use 3/4 cup broth for slightly soft
•••use 1 1/2 cups broth very soft
•••use 2 cups broth for extremely soft (almost mush)

Optional additions:
•1 tsp toasted sesame oil
•1 packed of no sodium seasoning
•garlic powder and onion powder

How to make Chicken and rice with vegetables in the rice cooker:
•Add all of the ingredients to the rice cooker
•turn on rice cooker to normal white rice setting (my rice cooker takes 1 hour)
•Allow to cook
•Remove chicken and cut or shred it into small pieces. Add it back in
•The chicken should be cooked through. but if you are worried, check with a thermometer, internal temperature should be 165ºF.
•serve and enjoy!
