Seasoning/Rub for the country-style ribs: 1 tablespoon of each of the seasonings. If you want to make enough to store and use in the future, just add equal amounts of each of the seasonings of your choice.

I started the country-style ribs in the iron skillet and finished them off in a 325F degree oven. I started the temp at 375F but lowered it to avoid overcooking and drying out the meat. Also, the time in the oven was actually just a little over 45 minutes and not the full hour. It is always best to check the meat several minutes before you think the time is up to be sure that you don't overcook your meat. You can always put it back in for more time but once it is overcooked, there is very little that you can do to reverse it. Experienced cooks can salvage overcooked meats by using them in a stew or braise them to add needed moisture and tenderize it.

UPDATE: Since I made this video, the population of our home has grown to 13!!! Our son and his 10 children moved in with us in November of 2015. I have made this recipe for them many times and they all love it. Our entire family loves "spicey". Some like it spicier than others but they all enjoy the "heat".

We hope you continue to enjoy this recipe and I will really try to post more cooking videos. I cook almost entirely from scratch and my family loves it. My grandkids love to cook!
