Days in my life / VLOG : 2nd & 3rd July, 2024

Country Grain Casserole -
2 med carrots chopped
1 cup mushrooms quartered
1 can black beans drained & rinsed
1 cup frozen corn
1 cup vegetable broth
1⁄2 cup pearl barley
fresh parsley - chopped
1⁄4 tsp garlic salt
grated cheese
1 Combine all ingredients in oven proof pot/dish
2 Bake at 180C for 60mins
3 Stir once at 30min
4 Sprinkle with grated cheese before serving.
Serves: 4
