Kanto and Kansai??
When you think of Japanese egg sandwiches, the one that comes to mind is probably the Kanto style.

The Kanto style is a common egg sandwich enjoyed all over Japan🥚🥪
The Kansai style, on the other hand, is mainly eaten around the Kyoto area🥚🥪

1 tbsp milk (use whipping cream for a richer taste)
5g butter

[mustard butter]
1 tsp mustard

[Kansai Style]

3 eggs
1 tbsp white soup stock
1 tbsp Kewpie mayonnaise
pinch of salt
75cc milk
1 tbsp cooking oil
