We all have a bit more time to cook as we’re locked insides our home and my family is always down for quick carnitas and spanish rice. You can serve these in warm tortillas with cheese or as burrito bowls – there’s no right or wrong, and it is ALL GOOD. Please feel free to use any kind of toppings you have on hand and don't forget to eat your greens!

And if you have some ice cold beers on standby, that will also work perfectly as a side :)

Ingredients:
2lbs pork butt or shoulder

Carnitas sauce:
1 whole orange
1 whole onion
5 garlic cloves
1 jalapeno
1 tsp black pepper corn
1 pinch coriander
1 tsp nutmeg
1/2 tsp cinnamon powder
1 1/2 tbsp salt
4 bay leaves
1 tsp garlic powder
1/4 cup water
Juice of one lime

Spanish Rice:
2 tbsp oil
3 pieces smashed garlic
1/4 of an onion diced
2 cups long grained rice
2 heaping tbsp tomato paste
1 tbsp salt
1 tsp cumin
1 tbsp pepper
dash of garlic and onion powder
1 tbsp chicken bouillon
