🟢材料:
苦瓜 300克
排骨 500克
薑 適量
鹽 適量
🟢醮排骨醬料:
生抽 2湯匙
老抽 ½湯匙
糖 1茶匙
蒜蓉、辣椒、炒芝麻、熱油適量

🟢做法:
1️⃣ 苦瓜洗淨去籽,切成適當大小。若要去除苦味,可加鹽醃苦瓜5分鐘然後洗淨。
2️⃣排骨加薑、蔥、酒汆水3-5分鐘。
3️⃣燒滾一鍋水,放入排骨和一塊薑,再次滾起後轉小火煮45分鐘。
4️⃣ 加入苦瓜煮5分鐘,若要苦瓜更腍滑可提早加入,最後加入適量鹽調味。
5️⃣醮排骨醬料: 碗內放蒜蓉、辣椒、芝麻,灒入熱油,加入糖、老抽、生抽調勻即成,吃時排醮享用。

🟢Ingredients:
Bitter gourd - 300g
Pork ribs - 500g
Ginger - as needed
Salt - as needed
🟢Ribs Dipping Sauce:
Light soy sauce - 2 tablespoons
Dark soy sauce - ½ tablespoon
Sugar - 1 teaspoon
Minced garlic, chili, fried sesame seeds, hot oil - as needed

🟢Cooking Directions:
1️⃣ Wash the bitter gourd, remove the seeds, and cut into appropriate sizes. If you want to reduce the bitterness, you can marinate the bitter gourd with salt for 5 minutes and then wash it off.
2️⃣ Blanch the pork ribs with ginger, scallion, and cooking wine for 3-5 minutes.
3️⃣ Boil a pot of water, add the pork ribs and a piece of ginger, bring to a boil again, and then simmer on low heat for 45 minutes.
4️⃣ Add the bitter gourd and cook for 5 minutes. If you want the bitter gourd to be more tender, you can add it earlier. Finally, add salt to taste.
5️⃣ To make the seasoning sauce for the ribs: mix minced garlic, chopped chili pepper, and fried sesame seeds in a bowl. Pour in hot oil, and add sugar, dark soy sauce, and light soy sauce. Mix well and serve with the ribs.
