Eggs Kejriwal Recipe | Egg Toast Breakfast | Cheese and Egg on Toast | Mumbai Style Egg Toast

Ingredients:
2 burger buns (or pav, bread – any kind works)
1–2 tbsp butter
Green chutney (for spreading)
1 cheese slice (optional)
1 small onion (finely chopped)
1 small tomato (finely chopped)
1 green chili (finely chopped)
2 eggs
Salt – to taste
Red chili powder – a pinch
Black pepper powder – a pinch
Chaat masala – a pinch
Fresh coriander leaves – chopped (for garnish)

Method:
1. Toast the Bread: In a pan, melt some butter and lightly toast the buns or bread.
Spread green chutney on both halves.
On one half, place a cheese slice (optional), leave the other with just chutney.
Cover the pan and turn off the gas. Let the cheese melt without burning the bread.
Remove both halves and set aside.

2. Prepare the Veggie Base: In the same pan, add a little more butter.
Add chopped onion, tomato, and green chili.
Sprinkle salt, red chili powder, and black pepper powder, then mix well.

3. Cook the Eggs: Make two small cavities in the veggie mix.
Crack one egg into each cavity.
Cover and cook on low heat until the egg whites are set and yolks remain soft.
Do not flip — this is a sunny side up egg dish.
Once cooked, sprinkle a little salt, chaat masala, and fresh coriander leaves on top of each egg.

4. Assemble: Cut the eggs apart if needed.
Place one sunny side up egg on each toasted bun half — one with cheese, one without.
Serve hot and enjoy!
