蝦醬帶子炒蘆筍 STIR-FRIED SCALLOPS AND ASPARAGUS WITH SHRIMP PASTE

材料 Ingredients
急凍帶子 5-8粒 / 5-8 frozen scallops
蘆筍 150克 / 150g asparagus
紅蘿蔔 半條 / half carrot
蔥白 適量 / white scallions, to taste
蒜末 2茶匙 / 2 teaspoons minced garlic
蒜頭 1瓣 (切片) / 1 glove garlic (sliced)
蝦醬 半茶匙 / 1/2 teaspoon shrimp paste
鹽 半茶匙 / 1/2 teaspoon salt
糖 1茶匙 / 1 teaspoon sugar
紹酒 2茶匙 / 2 teaspoons Shaoxing wine
麻油 半茶匙 / 1/2 teaspoon sesame oil

做法 Method
1. 蘆筍刨去較厚較粗部分,再切成段,備用。
Peel the woody part of the asparagus and cut into sections.

2. 紅蘿蔔去皮切片,葱白切段,備用。
Peel the carrot and cut into slices. Cut the white scallions into sections, set aside.

3. 急凍帶子浸淡鹽水解凍,再用水沖洗一下。
Defrost the frozen scallops with lightly salted water, then rinse them slightly with running water.

4. 煲滾一小鍋水,放入帶子灼1分鐘取出,瀝乾。
Bring a small pot of water to a boil, blanch the scallops for a minute, remove and drain.

5. 在鑊中加油,開中大火燒熱,下蒜片爆香,加鹽,再加入紅蘿蔔和蘆筍,快速炒至蘆筍剛熟即盛起。
Add oil to a wok, heat it over medium high heat. Sauté garlic until aromatic. Add salt, followed by the carrot and asparagus. Stir-fry quickly until the asparagus is just cooked. Remove and set aside.

6. 開中火下少許油,加入蒜末、蝦醬和糖,用鑊鏟推勻。放入帶子炒勻,灒酒,加入蘆筍、紅蘿蔔和葱白同炒,最後灑上麻油拌勻,即成。
Add a little oil to the wok and heat over medium heat. Add minced garlic, shrimp paste and sugar, mix well with a spatula. Add the scallops and stir-fry, then drizzle with wine, add the asparagus, carrot and white scallions. Stir-fry well and drizzle with sesame oil, mix well and serve.

Tips: 煮帶子時,要注意不能時間過長,否則容易變韌。細粒的帶子,煮幾秒鐘就可以;大粒的帶子,可煮一兩分鐘。
When cooking scallops, beware of not overcooking, otherwise the scallops will become chewy. For small-size scallops, they can only be cooked for a few seconds; for bigger-size ones, they can be cooked for 1-2 minutes.
