Today I'm sharing 3 VEGGIE LOADED kid-friendly breakfast meal prep ideas that anyone can make! These are great for those busy mornings before school because each of them is nutrient-dense and portable- the best part, they're kid-approved recipes and your children will love them. ZUCCHINI BANANA BREAD
1 cup cassava flour
1/2 garbanzo flour
3/4 cup dates (soaked)
3 large ripe banans
2 eggs
1 cup shredded zucchini (remove juice)
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1 tsp vanilla extract
Bake @ 350 for 30 minutes

SWEET POTATO WAFFLES
1 1/2 cups brown rice flour
1/4 cup coconut flour
1/4 cup ground flax seeds
1 cup cooked & mashed sweet potato
2 eggs
2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
3 tbsp vanilla bean ghee
1 1/2 cups oat milk
3 tsp pure maple syrup
1 tsp vanilla

SPINACH & BERRY CHOCOLATE CHIP MUFFINS
1 cup cassava flour
1 cup buckwheat flour
1/2 buckwheat porridge or GF rolled oats
1 cup unsweetened yogurt
1 medium banana
1 cup chopped berries
2 cups spinach
1 egg
3 tsp coconut nectar
2 tsp vanilla extract
2 tsp baking powder
1 tsp baking soda
chocolate chips on top
Bake @ 385 for 18-22 minutes
