Ingredients:

6 pork spareribs cut into 2-3 pieces (freeze ribs before cutting, it is easier to chop through the bone when frozen)
1/4 of a pineapple cut into 2 inch pieces
2 thai eggplants quartered
7 yardlong beans cut into 3 inch pieces
coconut milk (1/3 cup to saute lemongrass paste and 1 1/2 cup for curry)
3 cups of water
annatto seed oil (heat of 2 tsp of vegetable oil on low and add 2 tsp annatto seed for 20 seconds, drain and reserve oil)
thai basil for garnish


Lemongrass curry paste:

1/4 cup of sliced lemongrass
1 garlic clove
6 pieces of kaffir lime leaves cut into slices
1 tbsp of galangal sliced
3 tsp of turmeric powder
1 large New Mexico dried chili pepper (remove stem and seeds, soak in warm water for 1 hour)



Seasonings: *adjust seasonings to taste

1 tbsp of salt
1 1/2 tbsp of chicken bouillon
1 tsp of msg (optional)
3 tbsp of sugar
1 1/2 tbsp of fish sauce
3 tbsp of tamarind paste (mix wet seedless tamarind with hot water)
