Today, I’m sharing the recipe of Samosa.
A samosa is A triangular savoury pastry fried in ghee or oil an Indian Food consisting of vegetables, spices, and sometimes meat .
samosa is a a popular snack served for breakfast and for evening snacks. it is referred with several other names like vegetable samosa, indian samosa and even aloo samosa recipe.
The traditional punjabi samosa / aloo samosas filling are mainly made up of potatoes and peas. however nowadays to make it more fancy we do add cashew nuts and raisins. i have also shared samosa chaat recipe.
INGREDIENTS
2 Cup all purpose flour.
5-6 Boiled and peeled potatoes.
Refined oil.
½ Cup green peas , Boiled.
2 chopped green Chilies, 1 inch Grated ginger.
1 Tbsp Red Chili Powder.
1 Tbsp Cumin Seed Powder.
Salt to taste.
½ Tbsp garam Masala.
1 Tbsp Coriander Powder.
1 Tbsp carom Seeds.
1 Tbsp Mango Dry Powder.
RECIPE
Put all purpose flour in a Pot, add crushed carom Seeds, add 4-5 Tbsp of refined oil. Crumble well with your hands,
Add as much oil as it combines the all purpose flour nicely.
Add required water to knead into a stiff dough. make a tight dough.
Once dough gets ready, cover the dough with a wet cloth and rest for 10 to 15 minutes.
for the stuffing:
Put 3-4 Tbsp of oil in a heated Pan, add Chopped Green Chilies, Grated Ginger, Shallow fry . Add boiled Green Peas and shallow fry them , too.
Add Coriander Powder, Cumin Seeds Powder, Dry mango Powder, Red Chili Powder, Garam masala, Salt to taste, Mix well.
lightly mash the potatoes with your hand and add to tempering.
Mix well and shallow fry.
Potato mixture for stuffing is ready, Transfer to a Pot and set aside for cooling.
By now the dough sets well, Knead it well again.
Roll on the Board, it should not be sticky but need to be smooth and elastic. Cut and make small lemon sized balls.
roll out a portion of the dough in oval shape.the size should be of palm size.
now cut it horizontally, diving into 2 equal portions using a knife.
grease with water and make cone. gently press so that it sticks properly.
stuff a tbsp of prepared masala into the cone. grease little water on the edges and seal it gently. pull back and fold the cone. this is very important .
Make double fold at the centre edge.
Seal tightly by pressing firmly. Press well , samosa should stand. Otherwise it may open / Burst while frying.
One piece of savoury pastry ( samosa ) is ready, Make more samose as you need,
Frying samosa:

Heat oil in a Wok.
When oil gets enough hot, Put all the Samosa , one by one.
Deep Fry on Medium Flames.
Fry them for 10 minutes or till they turn Golden Brown and crispy.
In between keep tossing and turning , so that they fry well from all the sides.
Once fried well, Drain them to reduce their excess oil.
Very tasty and crispy Samose are ready, Serve them Hot at any tea time with green / Red sauce.
Note : to samosa stuffing, add raisins and cashews if you prefer.
