Hello and thank you for watching! In this video, we visit Xi’an Famous Foods, which as the name implies, is a famous NYC restaurant. Xi’an is one of the oldest cities in China, and where the owners came from before moving to the U.S. Here they serve fresh handmade noodles. A family-run business, this noodle chain has expanded to 11 locations throughout the city - with number 12 on the way according to their website XianFoods.com. The family originally had started a bubble tea shop in Flushing, Queens, NY which also sold food. They quickly realized that the food was selling faster than the bubble tea and changed the name to Xi’an Famous Foods!

Alright, on to the noodles. Handmade noodles, first of all, are well worth the time and effort. Any place that takes the time to hand-pull their noodles, is almost always going to serve you a bowl of something you want to come and eat again after you’re done. In Chinese culture, handmade noodles are extremely popular - and it’s no surprise why - it’s one of the cheapest ways to get a quick and satisfying meal. They aren’t terribly hard to make, and usually only have three ingredients: flour, water, and salt. After mixing the ingredients together, the dough is kneaded and laid to rest for about 2 hours. This helps the ingredients combine properly so when the chef is ready to pull them apart, they will separate easily yet remain intact enough to create a noodle. Once the noodle is formed, it is ready to be cooked, and prepared with various toppings and ingredients to order. Oh, and don’t forget to add a little bit of spice! A properly made noodle should be a bit springy, have a thick, meat-like texture, and be a bit chewy (but not too much).
