The fight against climate change, together with the protection of nature and biodiversity, starting from the single individual and small daily actions, such as cooking. Chef Franco Aliberti has a relationship with food that is one of love, experience and, above all, awareness. It teaches us the importance of being surprised and looking at food from a new perspective: many times what we consider waste is, in reality, an ingredient of inestimable value. Franco Aliberti (Scafati - SA, 1985) began his career very early, at 16, when he left his hometown to move to Salsomaggiore Terme. After completing his studies at the Istituto Alberghiero, he got to know Massimo Spigaroli's working reality, an experience that led him to develop a strong passion for pastry.
