Recipe:
Caramel Chocolate Mousse

✅For the Chocolate Mousse:
🍫150 grams dark chocolate callets / bar
🍫1/4th teaspoon sea salt
🍫1/2 teaspoon instant coffee powder
🍫100 grams heavy cream, room temperature
🍫80 grams heavy cream, whipped to stiff peaks

✅For the Caramel Mousse
🍫150 grams caster sugar
🍫50 grams water
🍫40 grams butter, room temp
🍫100 grams fresh cream
🍫Pinch of sea salt
🍫80 grams heavy cream, whipped to stiff peaks

✅To Serve
Whipped cream, as needed
Chocolate Shavings, as needed

✅Process:
1. To make the caramel sauce, add caster sugar and water to a heavy bottom saucepan. Cook on medium heat until the sugar dissolves and it starts to come to a boil.
2. Continue cooking on medium to low heat until it starts to turn amber in colour.
3. Once it does, turn off the heat and add the butter, whisk well and then add in the cream and continue whisking carefully as the caramel sauce starts to bubble and boil.
4. Add in the sea salt and mix well.
5. Transfer to a bowl and let it cool to room temperature. Then refrigerate for at least 4-5 hours or overnight until it’s chilled and set well.
6. Once well set, whisk it on a medium speed using electric beaters to lighten and loosen up the caramel.
7. In another bowl, take chocolate callets or roughly chopped chocolate bar, cream and instant coffee powder.
8. Pop in the microwave at 10 second bursts until everything is melted and combined well together.
9. Pop in the refrigerator for 10-15 minutes until cooled down to room temperature.
10. Whip cream to stiff peaks and divide equally into both the chocolate and the caramel mix. You don’t have to be exact here and you can eyeball it.
11. Fold gently until you don’t see creamy streaks in the mousse.
12. Transfer to two piping bags.
13. Pipe the chocolate mousse first in the base of your serving glass / bowl.
14. Use an offset spatula to evenly spread it. Wipe off the sides with a damp cloth to give it a clean layered look.
15. Pipe the caramel mousse layer and spread out evenly with your offset spatula
16. Let it set overnight in the refrigerator
17. Before serving, pipe some freshly whipped heavy cream (sweetened with some icing sugar and flavoured with vanilla) and chocolate shavings.
18. Serve
