Clove, green cardamom, pepper star anise
Cinnamon with fennel and coriander seeds
Roast all the spices and then let them cool
Make the meat masala that will make you drool
Use it to coat all the meat with your hand
Let the meat soak in the flavours of the land

Saute in coconut oil onion garlic,
Ginger and mustard, and chilli, turmeric
Curry leaves and coconut, slivered or sliced
Salt to your taste, and then the magic spice

Saute for a while, add the meat and then stir
Now add a cup or two or three of water
Pressurise on high first, then on low
Turn off the heat, we're almost good to go

In coconut oil Mariamma refries the meat
With curry leaves and coconut, a hot sizzling treat

INGREDIENTS & PROCESS FOR THIS RECIPE :
1/2 kg boneless meat cubes ( beef / pork / lamb / goat )

MARINATED overnight with 2 tsbsp of Meat Masala made by dry roasting and coarsely grinding 12 cloves, 12 green cardamom, 1 tsp whole black peppercorns, 2 star anise, 3-4 pieces of cinnamon, 2 tsp fennel seeds, 2 tsp coriander seeds

Saute in 3 tbsp Coconut Oil :
Onions : 2, sliced fine
Garlic : 12-15, sliced fine
Ginger : 1" julienned
Mustard seeds : 1 tsp
Green chilli - 1 or 2, slit
Turmeric powder - 1/2tsp
Curry leaves - I sprig
Coconut slivers - 1 cup
Salt to taste
Meat Masala - 2 tbsp

Add marinated meat, saute a few minutes, add enough water to cover meat, pressurise for 20 min - 15 min on high heat, 15 min on low heat

Refry the pressure cooker contents in 1 tbsp coconut oil, with a sprig of Curry Leaves and a handful of fresh coconut slivers, till most of the liquid is absorbed
