PINEAPPLE CAKE RECIPE

Ingredients:
1 egg
2 tsp baking powder
3 slices (rings) canned pineapple
2 tbsp pineapple juice
100 ml vegetable oil
1/3 cup sugar
1 cup plain flour
1 tbsp icing sugar (for dusting)

Method:
1. Pre-heat oven to 140 degrees Celsius convection or 160 degrees Celsius conventional.
2. Cut 3 slices of pineapple into smaller chunks. Set aside.
3. In a mixing bowl, whisk together egg, vegetable oil, sugar and pineapple juice.
4. Sift in flour and baking powder. Mix well.
5. Pour into a 16cm round pan.
6. Top it with pineapple chunks.
7. Bake for 45 minutes at 140 degrees Celsius convection or 160 degrees Celsius conventional oven.
8. Let it cool down on a rack.
9. Take the cake out of the pan, then dust it with sugar icing.
