How to make Pancit Bam-i
✅Ingredients:
½ pound pork belly, sliced thinly
1 large onion, chopped
4 cloves garlic, minced
½ pound chicken breast, sliced thinly
4 pieces chinese sausage, cut into strips
Shrimp, peeled and deveined
2 large carrots, julienned
1 cup green beans, cut into strips
½ cup wood ear mushrooms, soaked in warm water, sliced into strips
1 small cabbage, chopped
Salt to taste
Pepper to taste
3 cups water
3 tablespoons soy sauce
1 Maggi chicken cube
2 tablespoons Maggi oyster sauce
8 ounces pancit canton noodles
8 ounces sotanghon noodles, soaked in warm water
1 tablespoon sesame oil
✅Instructions:
In a pan, add pork belly. Cook until browned and the fats are rendered.
Saute onions and garlic until translucent and aromatic.
Add the chicken breast and continue cooking until almost done. Add Chinese sausage. Add shrimp and cook just until they change color.
Add carrots and cook for about 1 to 2 minutes. Add green beans, stir. Add wood ear mushrooms and stir to combine.
Add cabbage, stir. Season with salt and pepper to taste. Stir to blend. Cover and cook for about 2 to 3 minutes, or until the vegetables are half-cooked. Remove the vegetable mixture from the pan and set aside.
In the same pan, add water, soy sauce, chicken cube, and oyster sauce. Stir and bring to a boil.
Add pancit canton noodles and stir gently with tongs just until slightly softened. Add pre-soaked sotanghon noodles and stir to combine.
Add the meat and vegetable mixture, stirring to evenly distribute. Continue to cook and stir until the noodles are tender and the liquid is mostly absorbed.
Drizzle with sesame oil. Remove from the pan. Serve and enjoy!
