In preparation for #WINEDOWNWEDNESDAY on 3/16/22 we're making pear infused gin and roasted peach (or nectarine) honey syrup.

Pear Infused Gin:

750ml gin
2 pears (1 Anjou and 1 Bartlett)

Slice & dice pears
Add to any airtight jar
Pour the gin over the pears
Seal the jar and store in a cool dark place for 1-3 days
Strain and pour the gin back into it's jar and sit on your shelf with your other spirits
The gin will have it's normal shelf life!!

Roasted Peach or Nectarine Honey Syrup

Preheat oven to 400 °
Cut your fruit into halves or quarters (whichever you prefer)
Add the cut fruit to a sheet pan or baking sheet
Sprinkle 2-3 tbsp cinnamon over the fruit
Bake 20-30 min
Add fruit to a blender or food processor
Pour 3/4 hot water & 3/4 cup honey into the blender or food processor
Mix well
Strain and pour into a container
Refrigerate until use
