Yummo! Using leftover risotto cooked last night I’ve turned it into arancini balls to cook in the airfryer.

INGREDIENTS:
Risotto
Mozzarella cubes
Plain flour
2 eggs
Panko bread crumbs
Italian mixed herbs (optional)

Flatten a large tablespoon of cold risotto into your palm, place a cub of mozzarella cheese in the centre then close over and shape into a ball.

Dip risotto ball into flour, then beaten egg and finally bread crumbs (herbs optional).

Place into Airfryer basket (preheat prior) and cook for 10 minutes on 200 degrees. Cook until golden.
