Chocolate chip muffins recipe

Ingredients:

130 g yogurt
200 g chocolate chips + 1 tbsp flour
240 g all purpose flour
180 g white sugar
10 g baking powder
3 eggs
130 g melted butter
1. Combine melted butter with sugar and whisk. Then add the eggs one by one and whisk again.
2. Add the yogurt.
3. Lastly sift and fold in the dry ingredients followed by the chocolate chips.
4. Scoop the mixture into a muffin tray with 10 paper muffinforms attached till they are all filled up to the edge. Sprinkle with some additional chocolate chips.
5. Bake in oven for 10-12 minutes at 220°C and turn down the heat to 180°C for 20-25 min. Check if they're done with a toothpick.

Shami Kebab recipe

Method:

Wash the chana dal thoroughly and soak it in water for 2 hours. Drain the water and set aside.
In a large pot, combine the chicken breast piece & soaked chana dal, dried red chillies, garlic and ginger paste, whole spices , red chili powder, turmeric powder, salt, and water. Cook over medium heat until the meat and lentils are tender and the water has almost evaporated (about 40mins )
let the mixture cool slightly.
Alternatively, mash the mixture with a potato masher or pestle for a more textured result.
To the cooled mixture, add chopped green chillies (if desired), chopped coriander leaves, Mix well with your hands.
shape the mixture into small, flat patties about 2 3/4 inches in diameter. Place them on a tray and freeze for 1-2 hours. This will make them easier to handle when frying.
Heat oil in a frying pan over medium heat. Fry the kebabs in batches until they are golden brown and crispy on both sides.

Green chutney recipe

Ingredients:
• 1 cup fresh coriander leaves (cilantro)
• ½ cup fresh mint leaves
• 3-4 green chilies (adjust to taste)
• 5-6 whole dried red chillies
• 2 tbsp lemon juice (or 1 lemon)
• ½ tsp cumin seeds (or cumin powder)
• Salt to taste
• 2–3 tbsp yogurt

Instructions:
1. Wash coriander and mint thoroughly.
2. Add all ingredients to a blender/mixer.
3. Blend until smooth.
4. Taste and adjust salt, lemon, or chili.

Store in the fridge in an airtight container for 3–4 days.
