Baking Powder - A Pinch
Salt - A Pinch
Ghee - ¼ Cup
Water - ¼ Cup + 2 tbsp
Oil - For Frying

Sugar Syrup

Sugar - ¾ Cup
Water - ½ Cup
Cardamom Powder - 1/4 tsp
Saffron - A Few Strands

Cooking Instructions:

1. In a bowl, add the maida, baking powder and salt, mix well. Add ghee and crumble until the texture resembles crumbs.

2. Add water and clump together a soft dough. Cover and rest for 30 mins.

3. Boil the sugar with water and add the cardamom powder and saffron soaked in 2 tbsp of hot water to the syrup and mix well, bring to one string consistency. Cover and retain the heat of the syrup.

4. Portion into small roundels and make a hole with your finger in the centre of each.

5. Fry the badushah in low heat until crispy and golden brown, about 18-20 mins.

6. Turn them gently midway through.

7. Dip the fried Badushah in the warm sugar syrup for 5-10 mins and strain them.

8. Cool and serve.

Cooking Tips:

1. Store Airtight for a few days.

2. Do not knead the dough smooth, just mix enough to bring the dough together.

3. To check the consistency of the syrup, the last drop falling from the ladle must form a string.

4. The cooled badushah can be garnished with nuts
