2 pounds beef shank or beef short ribs

5 dried ancho chili’s or dried guajillo peppers
1 can chipotle peppers in adobo
1/4 cup vinegar
1/2 cup crushed tomatoes
7 cloves garlic
1 tsp dried oregano
1 tsp smoked paprika
1 tsp cumin
1 tsp chicken or beef bullion

1 medium onion
1 cinnamon stick
3 bay leaves
6 whole cloves
1 qt Beef stock

Corn tortillas
Cilantro
Cheese
White onion
