PASTA ALLA NORMA (Sicilian Style)

INGREDIENTS:
2 aubergines/eggplant (approx 500 gm)
1 tsp salt

4 tbsp olive oil
2 tsp minced garlic
1½ tsp chilli flakes
400g chopped tinned tomatoes or fresh cherry tomatoes
¼ tsp black pepper powder
100 gm Feta cheese
2 tbsp grated hard cheese (Parmesan cheese)

180 gm spaghetti (or pasta of your choice)
1 tsp salt

10-15 fresh basil leaves

METHOD:

1. Cut aubergine into long sticks. Sprinkle with salt and mix well. Cover and leave aside for 30mins.
2. Boil water in a large pot. Add 1 tsp salt. Add the spaghetti and cook according to packet instructions. Drain the water and keep aside.
3. Dry aubergine on a clean tea towel.
4. Heat oil in a pan. Cook aubergine until just softened and slightly browned, around 5 mins. Set aside.
5. In the same pan, add garlic (add oil if needed)
6. Saute for 2 mins on a low heat.
7 Add chill flakes sauté for 10 seconds.
8. Add tinned tomatoes. Let it simmer for 5 mins on a low heat.
9. Add aubergine and black pepper powder and mix well.
10. Add crumbled Feta cheese (save some for garnishing)
11. Mix well.
12. Add spaghetti and toss through sauce.
Adjust the seasoning. Add grated hard cheese.
13. Serve hot and garnish with crumbled Feta cheese and basil leaves.
