Folks, we got Episode 26 today and Jake is gonna walk us through the difficulties of trying to package beer while using Nitrogen. When you are running still product such as Cold brew coffee, or wine, Nitrogen is the way to go. When it comes to beer that has been carbonated with CO2, nitrogen is just too volatile, it expands significantly faster, more to the point, when nitrogen gas is no longer pressurized it expands in the neighborhood of 700 volumes. There is almost no way to contain the beer at that point, as the nitrogen in essence boils the CO2 out of suspension under pressure.
