Ingredients
Dough
450 g milk
2 tsp dried instant yeast
20 g honey
700 g strong white bread flour, plus extra for dusting
2 tsp fine sea salt
1 Tbsp olive oil, plus extra for greasing
800 g beef mince
Filling and Assembly
1 tsp olive oil
100 g red onions, quartered
12 slices streaky bacon, cut in 1 cm pieces
250 g pickled gherkins (drained weight)
30 cheese slices
2 Tbsp ketchup
2 Tbsp American mustard
water, for brushing
sesame seeds, for sprinkling
Sauce
200 g mayonnaise
1 tsp dried onion flakes
1 pinch fine sea salt, or to taste
1 pinch ground black pepper, or to taste
3 Tbsp ketchup
1 tsp pickled gherkin liquid

Preparation
Dough
1. Place milk, honey and yeast in mixing bowl then warm 1 min/37°C/speed 2.
2. Add flour and salt then knead 2 min/ dough mode. Meanwhile, grease a large bowl and sprinkle with flour.
3. Transfer dough to prepared bowl, cover with cling film and leave in a warm place until doubled in size (approx. 1 hour). Meanwhile, line a large baking tray with baking paper.
4. Heat 1 Tbsp oil in a frying pan over medium heat then brown beef mince for 8-10 minutes. Transfer to a bowl and set aside to cool.

Filling and Assembly
5. When beef has cooled completely, preheat oven to 200°C.
6. Place oil and onions in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
7. Add bacon and sauté 5 min/100°C/speed spoon speed. Drain then transfer to a bowl and set aside.
8. Place pickled gherkins in mixing bowl and chop 3-5 sec/speed 5 until chopped in small pieces. Transfer to a bowl and set aside.
9. Place 15 cheese slices in mixing bowl and chop 3 sec/speed 4.
10. Add cooled beef (drained of juices) and, with aid of spatula through hole in mixing bowl lid, mix 10 sec/reverse/speed 3
11. On a lightly floured surface, roll out dough to a rectangle (approx. 60 cm x 35 cm.)
12. Starting on the shorter side, arrange beef and cheese mixture over one half of dough, leaving a 2 cm border all around. Drizzle approx. 2 Tbsp ketchup and approx. 2 Tbsp American mustard over whole rectangle evenly (see tip). Lay remaining 15 cheese slices evenly over half of dough with no beef mixture, leaving a 2 cm border. Sprinkle reserved onion and bacon mixture over beef, then repeat with chopped gherkins (reserving 2 Tbsp for later).
13.Starting from the short side with the beef, tightly roll up dough into a log. Pinch open ends together to seal then tuck underneath log. Transfer log seam-side down to prepared baking tray. Brush all over with water then sprinkle with sesame seeds. Bake for 50-60 minutes (180°C), until hot in the centre, rotating tray halfway and covering with foil if browning too much. Meanwhile, clean mixing bowl and make sauce.

Sauce
14. Place mayonnaise, onion flakes, salt, pepper, ketchup, reserved 2 Tbsp chopped pickles, 1 tsp pickle brine in mixing bowl then mix 15 sec/speed 3. Adjust seasoning to taste.
15. Leave bread to cool for 10 minutes. Slice and serve warm with sauce on the side.
