So today is Sunday and that means Sunday Dinner, my husband has the main dish and I have desserts! I decided to do some fruit and cream cheese kolaches, and since I do most things big I made Big Ole' Homemade Kolanche two flavors Strawberry and Apricot with a delicious Cream Cheese Filling I got the recipe from the Website: Dessert For Two.com and its a small batch recipe I was able to make 4 Large Kolaches the original recipe makes 12 small kolanches
Kolanches For 2 Makes 4 Large or 12 Small WEBSITE: Dessertfortwo.com
Dough
2/3 Cup Warm Milk 2 tsp Yeast 2 Tbsp Sugar 2 Cups Flour
6 Tbsp Melted Butter 2 Egg Yolks Pinch Salt
Filling
4 Tbsp Strawberry Preserves 4 Tbsp Apricot Preserves 4 Oz Cream Cheese (soft)
Egg Whites from 2 Eggs Used in the Recipe 1 tsp Lemon Juice 2 Tbsp Sugar
Streusel Topping
3 Tbsp Soft Butter 3 Tbsp Flour 3 Tbsp Sugar Pinch of Salt
In mixing bowl combine warm milk, sugar and yeast allow to sit 10 mins or until foamy. Add butter, and egg yolks and mix until combined. Add flour one cup at a time on the second cup add salt and mix well. Once dough ball forms if using stand mixer allow machine to knead dough 5 mins if kneading by hand knead for 10. Place kneaded dough in oiled bowl, cover and place in a warm location for 1-2 hours or until doubled in size.
While waiting mix cream cheese filling by adding soft cream cheese, egg whites, lemon juice and 2 Tbsp Sugar mix well and set aside
Once dough has risen punch down and place on lightly floured surface cut dough into equal parts you can make four large or 6 Medium or 12 small kolanches.
Form each portion into balls place on parchment paper or silicone mat, cover and allow to rise another 45 mins to one hour.
Mix streusel by adding soft butter, sugar and flour mix until sandy, set aside.
Once dough has risen make an indentation into each to hold your filling, scoop in strawberry and apricot preserves then scoop in a nice amount of cream cheese filling, brush the sides with egg wash then sprinkle on streusel topping and place in oven Preheated to 375 Degrees and cook until golden brown 18-20 mins and allow to cool! Serve and ENJOY!!
