Recipe ingredients:
1 1/2 pounds chicken breast or thighs strips
1/2 medium red onion, thinly sliced
4 cloves of chopped garlic
Juice of 1 lemon
2 cups par-cooked white or brown rice
1 can of chickpeas, drained and rinsed (low sodium)
8 Ounces of cherry tomatoes, halved
Handful of fresh spinach
5 ounces feta cheese, crumbled
1 TBS oregano
1 TBSP paprika
1 TSP Italian seasoning
1/2 TSP red pepper flakes (optional)

Best to pair with side of Greek salad!
