STRAWBERRY SHORTCAKE CUPCAKES RECIPE
Serving 8-10

INGREDIENTS
1 cup and 2 tablespoons all-purpose flour
1 ¼ teaspoon baking powder
2 tablespoons cornstarch
½ cup sugar
1 ¼ teaspoon vanilla extract
Pinch of salt
¼ cup vegetable oil
2 large eggs
¼ cup melted butter
½ cup whole milk
½ cup diced strawberries
8 strawberry halves for garnishing (optional)

STRAWBERRY BUTTERCREAM RECIPE
1 cup freeze dried strawberries
2 ½ tablespoons heavy cream
¾ cup unsalted butter, at room temperature
1 ½ cups powdered sugar

INSTRUCTIONS FOR THE SHORTCAKE CUPCAKES:
1. Preheat oven to 350 degrees ºF.
2. Combine flour, baking powder, cornstarch and salt in a large bowl.
3. Add sugar, eggs and vanilla in the electric mixing bowl fitted with paddle attachment. Beat well on medium speed approximately 2-3 minutes until the mixture is light and fluffy.
4. Add vegetable oil and butter into the mixing bowl and beat on low speed until well combined.
5. Add dry ingredients and milk alternately in 3 equal parts and mix at low speed until incorporated.
6. Add diced strawberries and gently mix to combine.
7. Line the muffin tray with cupcake paper liners and scoop the batter evenly into the paper liners.
8. Bake in the oven for approximately 15-18 minutes. Insert a toothpick in the center of the cake. If the toothpick comes out clean, the cupcakes are done.
9. Remove from the oven and cool completely on a wire rack before frosting.

INTRUCTIONS FOR THE STRAWBERRY BUTTERCREAM:
1. In a food processor, add freeze dried strawberries and pulse for a few seconds until finely ground. Set aside.
2. Add butter, strawberry powder in the electric mixing bowl fitted with paddle attachment. Beat well on medium speed about 1-2 minutes until the mixture is light and fluffy.
3. Gradually add heavy cream and powdered sugar into the mixing bowl and beat on low speed until incorporated. Then increase the speed to medium-high and beat until frosting is light and fluffy, approximately 1-2 minutes.
4. Decorate/frost cupcakes using the pastry piping bags with your favorite decorative tip. You can also use a small spatula to frost the cupcakes.
5. Garnish with strawberry half (optional)
6. Enjoy!

Note: I would recommend adding more powdered sugar (1/2 cup to one more cup) and a little less freeze dried strawberries to the strawberry buttercream for a sweeter taste.
