One week ago marked six years since my Irish twin, my inspiration, and my partner in everything departed from us forever. Today I want to pay tribute to my sister Sedra, who was a symbol of hope and light for her students, her family, and many poor people. Her story needs to be told as not all heroes wear a cape.💔

Her struggle was dire as she was a candidate for heart and lung transplants. Despite her doctor’s warning she pursued her career and ended her life journey with the title of an assistant professor of mathematics and a hafiz. Her demise didn't just leave a deep scar on us but also left a huge gap in her institute where she was the sole mathematics mentor for her students in a
remote area.

There are days that I struggle with the same anxiety and uncertainty that I had for eight years when her health started deteriorating in 2012. But I always look up to her courage, hopefulness, and bravery, and that always encourages me to keep going and find my way. I have seen her struggles and her achievements and I ask myself what are my excuses to not try hard.

Pistachio kulfi is one of our favorite desserts that we both enjoyed a lot back then. I tried to capture the process as beautifully as I could. And I can only imagine how much my precious sister would love and appreciate it.
And if I were to write a book in the future, I already know to whom it would be dedicated. I will always miss you, my dear Sedra.❤️

Pistachio Kulfi Faluda

4 cups whole milk
3 cups heavy whipping cream
1 cup sweetened condensed milk
¼ cup pistachio cream (optional)
1 cup fine grind pistachio nuts
5 egg yolks
1 cup fine granulated sugar
1 tsp vanilla extract

Combine yolks and sugar and whisk till it doubles in volume. Heat milk in another pot and add ground nuts and pistachio cream to it. Take ½ cup of the hot milk mixture and add it to the whisked yolks for tempering. Whisk it quickly and pour it back into the hot milk pot. Don't stop whisking it.

Cook it on slow heat for three more minutes. Then remove from heat and add the rest of the ingredients to the mixture. Whisk them well and cool the mixture.
Transfer to the fridge and chill it overnight.

Pour the mixture into kulfi molds and freeze it overnight. Next day place the molds in some warm water for a minute and the kulfi will slide right out.
To make Faluda base:
2 cups of milk
One handful of angel hair pasta or faluda noodles
¼ cup sugar
2 cardamom pods

Heat milk and sugar in a pot and add cardamom to it. Heat it and add noodles to it. Cook it slowly till the pasta is tender. Remove from heat and chill it.

For serving:
Soaked basil or chia seeds
Rose syrup
Chopped pistachio nuts
Kulfi ice cream
Faluda base mixture

Assemble it as shown in the video. Enjoy!
