Tepache is a delicious drink from Mexico that is easy to make using wild fermentation. You just need a few simple ingredients. Recipe below.

Bearded’s Tepache – 3%abv
1 pineapple – just the skin and core
1 cone of Piloncillo – https://amzn.to/3TmQpTN
1 big chunk of fresh ginger root – chopped
2 cinnamon sticks
1 Gallon (4L) water
Optional – 1 chili pepper
Optional – 1/2tsp Pectic Enzyme - https://amzn.to/3Q04LGO
Cheese cloth or dish towel
1-2 gallon fermenter

1. Dissolve the piloncillo sugar in hot water and cool to room temp.
2. DO NOT WASH THE PINEAPPLE! Remove the skin and core.
3. Combine all ingredients in a large mouth vessel with the pineapple skin and core, then cover and ferment for at least 3 days.
4. Enjoy it on a hot day.
