Heyy friends 🤍 Welcome to my first "What I Eat in a Day" on here! These are my favorite videos to make on Instagram, TikTok, and Lemon 8, so I thought it was time to bring them on over here.
This isn't a long one, and it's not a whole bunch of cooking involved. So for my mom's, my busy bodies, workaholics, and my lazy girls, this is for you!

meal details:
breakfast- smoked salmon bagel
-mix cream cheese & dill
-slice cucumbers
-half a lemon
-slice 1/8 red onion
-cut bagel in half & toast
-spread on cream cheese mix, add cucumber, smoked salmon, red onion, capers, drizzle lemon over, and top with cracked pepper... SO good.
(Next time I'm adding a runny egg)
lunch- shrimp lettuce wraps
make a fresh pico de Gallo (2 person portion)
-1 tomato
-1/2 red onion
-1/2 bunch cilantro
-1 1/2 lime
-1 jalapeño
-chop everything up, add salt & pepper to taste
-cook your corn
-add small amount of oil to shrimp & season with salt, pepper, smoked paprika, lemon pepper, onion powder, garlic powder
-heat pan on medium/high heat and add oil or butter
-add shrimp & cook on each side about 1-2 minutes
-gut an avocado & add to washed romaine lettuce
-add sour cream, pico, corn, & shrimp.
-top with sriracha
dinner- pasta pizza (this was sent to me by Blue Apron, thank you so much, I was skeptical but it was so good!)
-preheat oven to 425
-boil pasta noodles, drain, put back in the pot & drizzle with olive oil
-add a layer of olive oil & parmesan to the bottom of a baking dish
-crack an egg & stir in the cooked pasta
-spread the noodles evenly in the dish and bake for about 23 minutes
-remove and layer cheeses of top (I like mozzarella & Monterey Jack)
-add tomato sauce over the cheese
-top with your favorite toppings
-bake another 15-18 minutes (cheese is melted and edges are crispy)
-remove & let stand for 3 minutes
I drizzled a hot honey sauce and parmesan cheese on top.
