The exploit used here is the combination of 3 things:
There are different animations for the coin toss depending on which way the coin is going to land
The result of a coin toss is only saved once the coin lands
The game pauses when it is not the active window

When the coin lands with the visible side up, the result will be the same as the previous coin toss, when it lands with the visible side down it will be different, except after the game is restarted or reset it will act like the previous toss was tails.
This means I can pause the game by clicking the desktop next to it right before the coin lands, check the result, and then close and restart the game if the result is not going to be heads.

The last throw at 9 heads in a row can have different animations depending on the ending, but all of them immediatly make the two top right buttons disappear, and tails does not.

Buying things from the shop is only saved when the coin lands or when the top right button is clicked, so after buying things it is necessary to click the button or you won't keep it. Also you cannot do this while the coin is in the air or it can interrupt your heads streak, because tosses that are mid air during this safe count towards streaks (but don't give money).
