Ingredients:
1 cup roasted groundnuts (peanuts) – without the skin
1 cup jaggery (or to taste) – grated or chopped into small pieces
1/4 tsp ghee (clarified butter) – for greasing

Instructions:
Prepare the Tray: Grease a flat tray or a plate with a little ghee or butter. This will prevent the chikki from sticking once it's set.

Roast the Groundnuts: If you're using raw peanuts, dry roast them in a pan until they turn golden brown and the skin starts to peel off. Once roasted, remove the skins by rubbing them between your palms and set them aside.

Make the Jaggery Syrup: In a heavy-bottomed pan, add the grated or chopped jaggery and a tablespoon of water. Heat it on low-medium flame. Stir continuously to ensure the jaggery doesn’t burn. Once the jaggery has melted and starts to form a sticky syrup, check the consistency. Drop a small amount of the syrup into a glass of water – if it hardens into a soft ball, it’s ready. You can also test by dropping a little jaggery syrup on a cold plate – if it hardens right away, it's done.

Mix Groundnuts with Jaggery: Add the roasted groundnuts to the jaggery syrup and mix well to coat all the peanuts evenly with the syrup. Add a pinch of salt and cardamom powder (if using) at this stage for extra flavor.

Shape the Chikki: Quickly pour the peanut and jaggery mixture onto the greased tray. Use a rolling pin to spread it out evenly into a thin layer (about 1/4 inch thick). Be careful; the mixture will be very hot. You can also use a flat spatula or the back of a spoon to press it down.

Cool and Cut: Allow the chikki to cool for 15-20 minutes. Once it’s firmed up and set, cut it into squares or rectangles using a sharp knife.

Store: Once completely cooled, the chikki will harden and can be stored in an airtight container for up to a week.

Tips:
Be quick when mixing the peanuts with the jaggery syrup, as it can harden quickly.
You can also add roasted sesame seeds (til) or other nuts if you prefer a variation.
