►Ingredients for the Fish and Chips

►For the Fish

1 kg haddock or cod

►Spices

½ tsp cayenne
1 tsp smoked paprika
1 tsp garlic powder
½ tsp msg
1 tsp black pepper
1 tsp salt
2 tsp cajun seasoning
1 tsp parsley
1 tsp crushed dried chives
Save some for later use

½ cup peri peri marinade

►For the Flour Mix

1 cup or 120g plain flour (all purpose in US)
2 tsp black pepper
1 tsp salt
1 tsp mixed spices

►For the Batter

1.5 cups or 180g plain flour
½ cup or 65g corn flour (cornstrach in US)
2 tsp baking powder
500ml cold soda water

►For Frying

1 litre sunflower oil

►For the Chips

1.5kg Maris piper potatoes
Water
2 tsp salt
1 tsp baking soda
2 tbsp distilled vinegar

►Sauce

1 cup mayonnaise
2 tbsp harissa
1 tbsp tomato paste
2 tbsp lemon juice
3 tbsp finely chopped onion
2 tsp sugar
½ tsp smoked paprika
¼ tsp ground cumin
½ tsp garlic powder
Salt & black pepper to taste

►Drink Ingredients (2 Glasses)

½ cup ready-made peach puree
3 cups sweetened soda water (chilled)
1 tsp juniper berries
Lemon wedges
A few fresh mint leaves
Ice cubes
