Cheera Parippu - Red Amaranth - Lentil Curry, Spinach Curry

1.
50gm yellow split moong dal
50gm toor dal
1/4 tsp turmeric powder
Salt as required

1 bunch of red cheera/amaranth

Trim, wash 3-4 times, then soak cheera in salt water(add little salt in the water) for 15-30 minutes. Wash again and squeeze out all the water and then finely chop and set aside

1cup grated coconut
2 small cloves of garlic
1tsp Kashmiri chilli powder
1/5th tsp cumin.
Grind to make a smooth paste of the above ingredients and keep aside.

For tempering:-
1tsp coconut oil or any cooking oil
1/2 tsp mustard seeds
1 dry red chilli cut into small pieces
Few curry leaves

Wash and cook the dals together until soft and cooked through. Mash the dal with a ladle, add turmeric powder and salt, combine well, add more water if required and boil. On boiling add chopped cheera/amaranth, stir well, cover and cook for 3 - 5 minutes. Add coconut paste in to it and cook again for about 2-3 minutes. Switch off fire.

In a small pan heat coconut oil, splutter mustard, add red chilli pieces and fry for a second. Switch off fire and add curry leaves, stir well and pour this on to the prepared cheera parippu curry. Serve hot with steamed rice or rotis.
