Ridge Gourd Sabzi / Turai Sabzi / Peera Upkari / Gosale Bhaji.

Ridge Gourd vegetable is a simple & nutritious vegetable. It is a healthy addition to any meal. It can be served as a side dish with dal, rice or can be served with roti’s too. This is the way my mom makes this Ridge gourd vegetable. Try this recipe & it will surely delight your taste buds.

Ingredients
Ridge Gourd – 2 (around 500 grams )
Onion – 1 (Chopped or sliced)
Green chilly – 1 or 2
Salt to taste
Fresh Coconut – ¼ cup
Coconut oil – 1 tbsp
Mustard seeds - 1/2 tsp.
Curry leaves - 2 springs

Method:
Rinse the Ridge Gourd thoroughly. Use a peeler to peel off the skin around the ridges & surrounding areas. Cut off the stem.
Discard the peel. (use the peels to make chutney).

Chop it lengthwise into half. Slice each half into 3 pieces lengthwise. Make horizontal slits to dice them into ½ inch cubes.

In a large vessel add chopped Ridge Gourd vegetable. Add Onion, salt & green chill.
No need to add water. As this vegetable releases moisture while cooking.
Mix all ingredients well.
Start to cook. Cook it will its done. Cook until the water evaporates completely. Check and mix in between.
Garnish it with fresh coconut. Cook for 2 mins.

Make Tadka
Heat a tablespoon of oil over medium heat.
Add mustard seeds add curry leaves.
Pour this to vegetable.
Serve hot.
