[INDONESIAN]
Resep Tongseng Sapi (untuk 7-8 porsi)

Bahan bumbu halus:
8 siung bawang putih
10 siung bawang merah
4 butir kemiri
50 gr cabai keriting merah
5 cm kunyit
2 cm jahe
4 cm lengkuas
1/2 sdt ketumbar sangrai
1/2 sdt jintan sangrai
Minyak secukupnya

Bahan gulai:
500 gr daging sengkel / iga / ayam / campur, potong
2 lembar daun salam
2 batang serai, geprek
Daun kunyit / daun kari (opsional)
5 lembar daun jeruk
1/2 butir pala, hancurkan
2 butir cengkih
1 butir bunga lawang
3-5 butir kapulaga
3-4 cm kayu manis
1/2 buah asam kandis / asam jawa (opsional)
1,2 liter air
200 ml santan instant kental
1 sdt garam
⅓ sdt merica
1-2 sdt kaldu sapi / penyedap
1 sdt gula pasir

Bahan iris:
150 gr daging has dalam, opsional, potong
1 sdm margarin
5 siung bawang merah, iris
½ buah bawang bombai, iris
1 buah tomat merah, iris
2 batang daun bawang, potong
100 gr kol, iris
1 sdm kecap manis
½ sdm saus tiram
7 buah cabai rawit, iris
Bumbu-bumbu sesuai selera

Langkah
1. Blender bawang merah, bawang putih, kemiri, kunyit, jahe, lengkuas, cabai keriting merah, ketumbar, jintan dan sedikit minyak hingga halus
2. Tumis bumbu halus hingga wangi lalu masukkan serai, daun salam, daun jeruk, pala, cengkeh, bunga lawang, kapulaga, kayu manis dan asam kandis, aduk rata
3. Tambahkan garam, merica, penyedap, daging sengkel yang telah dipotong dan air, presto selama 30 menit
4. Setelah empuk, masukkan santan dan gula, aduk rata
5. Panaskan wajan, masukkan margarin, aduk lalu masukkan bawang bombai dan bawang merah, tumis hingga wangi
6. Masukkan daging, cabai rawit, daun bawang, aduk rata lalu masukkan kol, air rebusan gulai, kecap manis, saus tiram dan bumbu-bumbu sesuai selera
7. Tongseng sapi siap disajikan

Beef Tongseng Recipe (yield 7-8 servings)

Blended Spices ingredients:
8 clove garlic
10 pc shallot
4 pc candlenut
50 g red curly chili
5 cm turmeric
2 cm ginger
4 cm galangal
1 tsp toasted coriander
1 tsp toasted cumin
Oil, as needed

Gulai ingredients:
500 g beef shank / ribs / chicken / mixed, sliced
2 pc bay leaf
2 pc lemongrass, pounded
Turmeric leaf / curry leaf (optional)
5 pc lime leaf
1 pc nutmeg, pounded
3 pc clove
2 pc star anise
5 pc cardamom
5 cm cinnamon
1 pc asam kandis / tamarind (optional)
1 L water
100 ml coconut milk
1 tsp salt
⅓ tsp pepper
1-2 tsp beef powder / flavor enhancer
1 tsp sugar

Sliced ingredients:
150 g beef fillet, optional, sliced
1 tbsp margarine
5 pc shallot, sliced
½ pc onion, sliced
1 pc red tomato, sliced
2 pc green onion, sliced
100 g cabbage, sliced
1 tbsp sweet soy sauce
½ tbsp oyster sauce
7 pc Thai chili, sliced
Seasonings, to taste

Steps:
1. Blend the shallots, garlic, candlenuts, turmeric, ginger, galangal, red curly chili, coriander, cumin, and a bit of oil until smooth.
2. Sauté the blended spices until fragrant. Add the lemongrass, bay leaf, lime leaf, nutmeg, clove, star anise, cardamom, cinnamon, and asam kandis. Stir.
3. Season with salt, pepper, flavor enhancer, sliced beef shank, and water. Pressure cook for 30 minutes.
4. Once tender, add coconut milk and sugar. Stir.
5. Heat the pan. Add margarine and stir. Add onion and shallots. Sauté until fragrant.
6. Add the meat, Thai chili, and green onions. Stir, then add the cabbage, Gulai broth, sweet soy sauce, oyster sauce, and seasonings, to taste.
7. Beef Tongseng is ready to serve.
