Pineapple Coconut Cake (thanks Mama!)
Follow instructions for 1 box of Betty Crocker Yellow cake mix, but slight adjustmet:
~ Sub the 1 cup of water, for 1/2 cup of Pineapple Juice, and 1/2 cup of water

Cream Cheese Frosting (thanks Mama!)
~ 8oz Butter
~ 4oz Cream Cheese
~ 16oz Powdered Sugar
~ 1/2 tsp Lemon juice -- can do more to taste
~ 3/4 tsp Vanilla Extract
~ add milk as needed
