How to make Cheesy Baked Macaroni
✅Ingredients:
2 tablespoons oil
4 hot dogs, cut on a bias
1 onion, chopped
4 cloves garlic, minced
1 ½ pounds ground beef
½ red bell pepper, diced
½ yellow bell pepper, diced
½ pound baby bella mushrooms, sliced
2 Roma tomatoes, chopped
24 ounces spaghetti sauce
½ cup tomato or banana catsup
½ cup water
salt and pepper to taste
1 teaspoon Italian or herb seasoning
1 tablespoon sugar
1 pound elbow macaroni
For bechamel/cheese sauce:
½ cup butter
½ cup flour
4 cups milk
Salt to taste
Pepper to taste
¼ teaspoon nutmeg
1 cup cheddar, cubed
✅Instructions:
Heat oil in a pan. Add hot dogs, and sear until lightly browned. Remove and set aside.
Saute onions and garlic until softened and aromatic. Add ground beef, break apart, and cook until lightly browned.
Add bell peppers, baby bella mushrooms, and tomatoes. Stir to distribute.
Add spaghetti sauce and tomato/banana catsup, stir to combine.
Add water, salt and pepper to taste, Italian or herb seasoning, and sugar. Stir to distribute. Simmer for about 50 to 60 minutes or until the sauce is thickened.
Add the seared hot dogs, stir, cover, and continue to cook for a few minutes. Turn off the heat and set aside.
In a pot, boil water. Add elbow macaroni and cook according to package instructions until al dente.
Drain and rinse with cold water. Drain the macaroni well. Transfer to a bowl.
Combine the meat sauce with the macaroni. Stir until well distributed.
Brush a 9x13-inch oven-safe pan with butter or oil. Transfer the pasta mixture and spread evenly. Set aside.
For the cheese sauce, add butter and flour to a pan. Whisk until combined.
Slowly add milk while whisking to prevent lumps. Season with salt and pepper to taste. Add nutmeg.
Simmer until it's thick enough to cover the back of the spoon. Add cubed cheddar cheese and stir until melted and smooth.
Spoon cheese sauce over the pasta and spread it evenly. If needed, insert toothpicks to tent the foil.
Bake in a preheated 375°F oven for 20 to 30 minutes. Remove foil after 30 minutes and continue to bake for another 10 to 15 minutes or until the topping is slightly browned.
Remove from the oven and let stand for about 15 to 20 minutes before slicing.
