Most of us have heard Farmfoods supermarket in Britain are selling Swift St Luois style pork spare ribs for around £10 each. With them being a good brand, accessible and well priced, it's hard to ignore.
So I loaded the Weber summit kamado bbq with Big K lumpwood charcoal, cherry wood chunks and smoked them slowly. Dusted with Meat church holy cow rub and Angus & Oink pit boss bbq sauce, they turned out really well.
I used the 321 method as a guide but you may find your ribs cook slower or quicker so adjust your timings to suit.
