This schwarma is so easy to make, slow roasted and spiced to perfection. This is great as a roast, for schwarma wraps and we use the leftovers for am ultimate lamb schwarma hash brunch. So versatile and a lamb shoulder makes so many meals.
Ingredients
1 leg / shoulder of lamb (1kg)
3 garlic cloves , minced
1 tbsp ground coriander
1 tbsp ground cumin
1 tbsp ground cardamon
1 tsp cayenne pepper
2 tsp smoked paprika
1 1/2 tsp salt
1/2 tsp black pepper
1/4 cup / 65 ml extra virgin olive oil
2 - 3 tbsp / 40 - 60 ml lemon juice

For the Lamb Schwarma :
Small wraps / Arabic flat bread
Garlic sauce
French Fries
Lettuce
Pickled onion and cucumber

For the Hash:
3 potatoes cubed
½ onion, chopped
1 ½ cup lamb stock
1 tsp smoked paprika
1 tsp coriander
1 tsp cumin
1 fried egg
