做法步骤:
1. 粘米粉360克、小麦淀粉40克、加盐,倒入400克凉水搅拌成没有颗粒的面糊,静置10分钟。
2. 刚烧开的水倒入面糊中搅拌均匀。
3. 蒸面皮的盘子薄薄刷满食用油防粘,一口比盘子稍大的浅口锅,烧一锅开水。
4. 舀两勺米糊倒入盘中,晃匀铺满,放入开水锅,上汽蒸3 分钟,米皮鼓起有大泡即熟,取出放凉水中降温,揭下切条。
5. 料汁: 水中放入桂皮、花椒、八角、陈皮、小茴香、花椒香料煮开,倒入醋煮出香味。干辣椒面加盐搅拌均匀,热油泼香。
6.盘中加调料水、油泼辣椒、蒜末、在加入加莴笋丝或自己喜欢的青菜,搅拌拌匀。
备注:
米皮切宽条,料水趁热加就是汉中热米皮。米皮切窄条,料水凉了加就是秦镇米皮。

Rice Noodles

Ingredients:
360 grams of glutinous rice flour
40 grams of wheat starch
400 grams of cold water
400 grams of boiling water
Lettuce shreds, garlic, scallions
Salt, chili powder, vinegar, light soy sauce
Spices: cinnamon, Chinese prickly ash, star anise, dried tangerine peel, fennel, Chinese prickly ash

Steps:
1. Mix 360 grams of glutinous rice flour and 40 grams of wheat starch, add salt, and pour in 400 grams of cold water to stir into a smooth batter without lumps. Let it stand for 10 minutes.
2. Pour the freshly boiled water into the batter and stir evenly.
3. Thinly brush the plate for steaming the rice noodles with cooking oil to prevent sticking. Use a shallow pot larger than the plate and boil a pot of water.
4. Scoop two spoonfuls of the rice paste into the plate, shake it evenly to cover the bottom, put it into the boiling water pot, and steam for 3 minutes until the rice noodle is puffed up with big bubbles, indicating it is cooked. Take it out and put it in cold water to cool down, then peel it off and cut it into strips.
5. Sauce: Put the spices such as cinnamon, Chinese prickly ash, star anise, dried tangerine peel, fennel, and Chinese prickly ash into water and boil. Pour in vinegar and boil until fragrant. Mix the dried chili powder with salt evenly and pour hot oil over it to make it fragrant.
6. Add the seasoned water, oil-spilt chili, minced garlic to the plate, and then add lettuce shreds or your favorite green vegetables and stir evenly.

Note:
Cut the rice noodles into wide strips and add the seasoned water while it is hot to make Hanzhong hot rice noodles.
Cut the rice noodles into narrow strips and add the cooled seasoned water to make Qinzhen rice noodles.
