INGREDIENTS:
Wheat Flour(गेहूं का आटा) - 1.5 Bowl
Salt(नमक) - Some
Oil(तेल) - 1 Tsp
Water(पानी) - As required
For Chutney:
Water(पानी)
Dry Red Chili(सूखी लाल मिर्च) - 20-25
Tomatoes(टमाटर) - 2-3
Oil(तेल) - Some
Ginger & Garlic(अदरक और लहसुन) - 1 Tbsp
Soya Sauce(सोया सॉस)
Tomato & Dry Chilli Paste(टमाटर और सूखी मिर्च का पेस्ट)
Water(पानी) - Some
Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) - 1-1.5 Tbsp
Salt(नमक) - As Per Taste
Sugar(चीनी) - 1/2 Tsp
White Vinegar(सफेद सिरका) - 1 Spoon
For Veg Filling:
Cabbage(पत्ता गोभी)
Spring Onion(हरी प्याज)
Carrot(गाजर)
Onion(प्याज)
Ginger(अदरक)
Garlic(लहसुन)
Green Chilli(हरी मिर्च)
Salt(नमक) - As Per Taste
For Paneer Filling:
Cottage Cheese/Paneer(पनीर)
Coriander Leaves(धनिया पत्ती)
Green Chilli(हरी मिर्च)
Salt(नमक) - Some
For Slurry:
Water(पानी) - 1 Cup
Cornflour/Arrowroot(कॉर्नफ्लोर/अरारोट) - 1 Spoon
For Momo Manchurian:
Oil(तेल) - Some
Ginger & Garlic(अदरक और लहसुन)
Onion(प्याज) - Long chopped
Capsicum(शिमला मिर्च) - Long chopped
Spring Onion(हरी प्याज) - Some
Salt(नमक) - As Per Taste
Black Pepper Powder(काली मिर्च पाउडर) - Some
Soya Sauce(सोया सॉस) - Less than 1/2 Spoon
Momo Sauce(मोमो सॉस) - 2-3 Spoon
Tomato Sauce(टोमेटो केचप) - 2 Spoon
Arrowroot Slurry(अरारोट का घोल)
RECIPE:
For Momo Covering, take some sieved Wheat Flour, put some salt, some Oil in it and bind the dough by adding some Water to it gradually. Then cover it and keep the dough for some time.
For Momos Chutney, keep the pan on the flame, put some Water, Dry Red Chilli, roughly chopped Tomato. Cover it and cook it, then drain out the water & keep it for cooling down and grind them. Take a pan, put some Oil, finely chopped Ginger & Garlic, Soya Sauce, Tomato & Red Chilli Paste, some Water, Kashmiri Red Chili Powder, Salt to taste, Sugar, White Vinegar in it and cook it on slow flame. In this way, Red Spicy Momos Chutney will get ready.
For Filling, take some finely chopped Cabbage, Spring Onion, grated Carrot, Onion, Ginger, Garlic & Green Chilli, some Salt. Mix it well and keep it aside.
For Paneer Filling, take some grated Paneer, Coriander Leaves, Green Chilli & some Salt. Mix it well and keep it aside.
For Momos, make some small dough balls and roll them thinly. Then put the Veg or Paneer filling in the center and fold it and give it shape. In this way, make ready all the Momos. In a pan, put some Water for boiling, keep a strainer plate on it and grease it with Oil. Put the ready Momos on the plate then cover it and give them steam for 15 mins. Then serve the Street Style Veg Momos, Paneer Momos with homemade Red Spicy Chutney.
For Slurry, in a bowl, take some Water and Arrowroot/Cornflour. mix it well and keep it aside.
For Momo Manchurian, keep the pan on the flame, put Oil, Ginger Garlic, long chopped Onion, Capsicum, Spring Onion, Salt to taste, Black Pepper Powder and saute them. Then add Soya Sauce, Momo Sauce, Tomato Sauce, Arrowroot Slurry in it and cook it well. Then put steamed Momos in it and garnish it with Spring Onion. In this way, 3 in 1 Momo - Veg Momos, Paneer Momos, Momo Manchurian will get ready easily at home.
