This Ultra (LVL 3) Espresso is a high-precision shot, using frozen single-dosed beans, paper filters for both the bottom of the basket and the top of the puck, and a metal puck screen for even water distribution. We take extra steps to minimize retention, reduce static, and preserve volatile aromatics, ensuring a clean and expressive extraction.
For this recipe, we used the Loveramics Urban Twisted Glass (80 ml) and placed it on a small rack above the drip tray, with scales positioned under the machine for precise weighing while keeping them dry and away from splashes. The ARO Espresso aluminum chiller was placed on top of the glass before extraction, allowing the espresso to be extracted directly through the chiller to trap volatile compounds and enhance flavor preservation.
This LVL 3 espresso preparation is designed for those who want to push the limits of espresso extraction, refining every detail to achieve a shot with unmatched clarity, balance, and complexity.

Single-dosed frozen coffee beans: 20 grams (freshly roasted, stored in the freezer)

1️⃣ Prepare the Beans & Grounds
Take pre-weighed frozen beans from the single-dosing tube. Lightly mist them with RDT spray to minimize static.
Grind directly into the espresso shaker using the Ditting 807 Lab Sweet, then shake to break up clumps.
2️⃣ Prepare the Portafilter & Puck
Place a paper filter at the bottom of the portafilter basket.
Use the portafilter funnel to transfer the grounds neatly.
Distribute the grounds evenly and tamp using the BOSe electronic tamper for a consistent, level puck.
Place another paper filter on top of the puck, followed by a metal puck screen.
3️⃣ Set Up for Extraction
Place the Loveramics Urban Twisted Glass (120 ml) on the small rack above the drip tray.
Position the ARO Espresso aluminum chiller on top of the glass before extraction.
Ensure the scales are placed under the machine, keeping them away from water splashes.
4️⃣ Extract the Espresso
Lock the portafilter into the group head and begin extraction, aiming for 50 grams of espresso yield in 25–35 seconds.
The espresso will flow through the chiller, helping to trap volatile aromatics and preserve temperature stability.
5️⃣ Serve & Enjoy
Once extraction is complete, remove the chiller and serve your Ultra-Level Espresso, enjoying the full complexity of the shot.
6️⃣ Clean Up
Knock out the used coffee puck into the knock drawer.
Rinse the portafilter and wipe the group head clean.
Dry the aluminum chiller and clean the tamping station.
