I decided to try a cheap setup. This is a Wallop knife (1.4116 steel) and I'm only using a King 300. Before starting the video, I dulled the knife (maybe too much) to make sure it wouldn't cut paper.

The King 300 is the best bang for your buck whetstone out there. It cuts and leaves a finish closer to a 500 grit and it has the bonus of being splash and go. I strongly recommend this stone to someone starting out.

I start by establishing a new edge. This took a bit more time than expected because I ran the knife across a stone to really make sure it was dull. My deburring process is a little unusual. I like doing edge-leading strokes at first trying to remove as much burr as possible. After that, I do alternating edge trailing passes starting at 5 per side. Once I'm down to 3, I check if I can still feel it. The wine bottle cork is great to remove any stubborn wire edge. Before going back to the stone, I like using the strop a bit to accelerate the cleanup process. When I get back on the stone, it's really to refine the edge. This is where it can get really sharp. Do as many as needed with very light pressure. I always finish with a little bit of stropping.

You don't need fancy equipment to get a knife sharp. This was hair popping sharp off a King 300. The key is patience and practice. Those last stropping strokes on the stones are very light but they make a big difference.

I don't really like this Wallop Knife because the handle size is too big. I would recommend these if you want something in the same price range:
