In today’s episode, I am making the most delicious but easy Scandinavian sweet pickle. It is cheap and easy to make, and the taste is far superior to any store-bought pickle. This tangy and sweet cucumber pickle is perfect for barbecues and picnic and will elevate any meal! It is possible to consume the pickle freshly made but it is better to let the pickle stand for 4-6 weeks for the flavour to enhance.

Scandinavian sweet pickled cucumber:

Ingredients:

• 3 large cucumbers
• 1 onion
• 1 pepper
• ½ cup salt
• 1 cup sugar
• 1 cup cider vinegar
• 2 teaspoons mustard powder (or 3 teaspoon yellow mustard seeds)
• 1 teaspoon celery seeds
• 1 teaspoon ground turmeric

Instructions:
Slice cucumbers, onion and peppers and add them into a large bowl. Sprinkle with salt and stir well to distribute the salt evenly. Cover and allow to stand for 2 hours. Transfer the vegetable to a colander, rinse with cold water and allow to drain well.
In a large pan, combine sugar, vinegar, celery seeds, turmeric and mustard powder. Bring to boil and stir until the sugar is dissolved. Add the prepared vegetables and cook for 10 minutes. Ladle the hot pickle into sterilized jars and seal.
To can the pickle, boil the sealed jar in hot water for 15 minutes. Remove the jars from the pan, allow to cool down, label and store.
