May Song is the 6th song in Suzuki book 1, and is therefore great for beginners - it only uses the A and E string. This video with sheet music and violin tab will help you learn it. When teaching this I like to point out the dotted quarter notes and the fact that the piece starts with an A Major arpeggio (this point in the learning process is a great time to start learning arpeggios and point out arpeggio and scale patterns in repertoire).

You can also try adding dynamics by using more or less bow altogether in certain lines - you'll notice that in this video I play the second half of the second line more quietly. This creates a sort of echo effect.
