Breakfast Skillet with Potatoes and Eggs in a Cast Iron Skillet - Just 4 Ingredients

This breakfast skillet with potatoes and eggs is one of my favorite meals. I make this for myself at least once a week. It’s versatile and I just use whatever ingredients I have on hand at the time. This particular morning I had both sausage and bacon as meat options for my cast iron breakfast skillet. I decided to go with the bacon, as it was a new one that I had never had before.

You can cook the eggs in a breakfast skillet however you like but I stick with scrambled eggs, which are my favorite way to eat them. Also feel free to add any vegetables you prefer like peppers or onions.
